TASTING NOTES
Nose — Spice and earthy aromas support vibrant, expressive top notes of red cherry, rhubarb and plum. A whisper of liquorice and forest floor lends further complexity to the bouquet.
Palate — A flowing, velvety entry opens into a full, generous midpalate. Red berry fruits rest on a subtle framework of savouriness, with a persistent yet understated intensity that runs the length of the palate and finishes with enduring complexity and poise.
FOOD PAIRING Lamb, game, roasted duck, or mushroom risotto.
SERVE AT 16–18 °C
WINEMAKING Optimally ripe, healthy grapes are hand-selected and harvested by hand. Bunches are cooled overnight, with 80% destemmed and 20% retained as whole bunch in the fermentation tank. Following a three-day cold soak, spontaneous fermentation begins, with two gentle pump-overs daily to coax flavour from the skins without aggressive extraction. Once fermentation is complete, the skins are lightly pressed and the wine transferred to 228-litre French oak barriques. After 16 months of maturation, the finest barrels are selected and blended for bottling.
